Is it not logical that water wouldnt cool well if its all boiled out of the system? Which was the end result and the backing of my statement and the reality of the situation I was in.

If the car is boiling the water, it's running too hot in the first place. That's the point that you seem to be missing.
Maybe I'm wrong, but I think doing a compression &coolant pressure test would probably be a very wise thing to do right now!
