with a JBL bp1200.1 it's 1200 watts with a regulated output between 1 and 2 ohms, so a 1.3 ohm load would indeed provide 1200 watts total. This, like the JL slash series amps, is an exception to the rule though so usually yeah running three subs makes dividing up power an annoyance. Personally I like the idea of two SX subs over the three SE subs but that's just me. I was never a big fan of the three sub setup.
more isn't always better depending on your goals.

just the BP series class D mono amps.
the 1200.1 and 600.1 are rated 1 ohm stable, but put out the same power at 1 ohm as at 2. nice feature if current draw is a concern, or you want to run unconventional sub configurations. the drawback is that those amplifiers don't have an integrated subsonic filter, so you have to add an FMOD filter to use a ported enclosure if you want to avoid the possibility of driver damage.

the thing is i would go with 2 sx's but thats 400 watts under the rated power Id be giving them, and 3 se's would only be 200 plus id also gain a little from another drive :) thats the reason im thinkin about that. I cant find the working frequencies for the RE drivers anywhere, some drivers can play 20-200 hz some like the sonys play 20 - 1000 hz, what kind of sub plays at 1000 hz lol. Id be very happy with a a setup where I can hit around 135-140 dbs, i dont think ill ever need anything higher.

Remember...RMS is only a thermal rating. It expresses how much heat the voice coil can handle in watts.
SO...in a properly made enclosure, the SX's should sound very good. Consider this, the Adire Audio Brahma 15" has an RMS rating of 1600 RMS, and William from Nola is running 600 watts to his and he's hitting in the low 140's.
Hope this helps a little.
