Ideally, one per channel (most are sold in pairs of channels). That can get costly though. To get pro quality (that is, ones that really work well), you'd spend around $250 for a pair of channels - dbx 166xl. I have the dbx 166xl, it's so sweet. I also have a 4 channel Behringer 4600. It works well for bass and as a limiter, but not that great for vocals. Not sure if I can recommend it as one to buy, but it's decent for the money.
I'd use it only on necessary channels. Those include: Bass guitar, vocals, drum overhead mics, bass drum mic (if one).
For the limiter, it could be used on the entire mix before running it to the recorder/computer.
