Ok guys I have wanted to do this ever since the beer thread, I just never got around to it.

The fact is, I love to cook. Ok I love to eat, and I’m a good cook, so cooking comes pretty naturally to me. So I figured I would hook you up with a few of my favorite recipes.

The first is my home made salsa.

1 can original rotel
1 can diced tomatoes (I like roma style the best)
1 Habanera (minus the seeds)
1 Clove garlic
1 Small white onion
4 jalapeños
Cilantro to taste
Splash of Garlic Salt, Garlic Powder, and Onion Powder

Blend for about 20 seconds (I use a food processor, so it will be less for an actual blender)

Toss in the fridge and let it set overnight.

You can add or subtract on the peppers to get it as hot as you want. I like spicy food, so this recipe turns out pretty hot.

Next is my Spicy Cajun Shrimp.

1 lb. Jumbo shrimp
1 tsp. cayenne pepper
1/2 tsp. black pepper
1/2 tsp. salt
1/2 tsp. crushed red pepper
1/2 tsp. crushed thyme leaves
1 tsp. crushed basil leaves
1/2 tsp. oregano
1/3 c. butter
1 1/2 tsp. minced garlic
1 tsp. Worcestershire sauce
1/4 c. beer, room temp.
1 c. diced tomato (I normally use a cup of my home made salsa instead of the cup diced tomatoes. It gives it a little more of a kick)

You can serve with white rice, or by its self.

Last is my Steak.

I normally use a ¾ to 1 inch thick T bone, so the cooking times will be for it. If you cook something thicker or thinner, just adjust the times as needed.

About an hour before I fire up the grill I pull out the steaks and sprinkle them with,

Garlic Salt
Garlic Powder
Onion Powder
Black Pepper
Sea Salt
A little Crushed Red Pepper
Some seasoning salt
Rub it all in using some Worcestershire sauce

I leave mine setting out, so the spices soak in faster. If you put it in the fridge you might want to let it set for longer.

Then I take some hickory, and mesquite chips, and toss them in warm water to soak.

After an hour I prep the grill.

Since its gas, and I like to smoke my foods, I take one of the lower racks out, and turn over the V shaped heat distributors to set my wood chips in. Once I get it fired up, I turn the burners to low, and add some of the wood chips.

Once the wood chips get to smoking good, I toss the steaks in on the upper rack, and let them cook for about 15 min a side. (adding wood chips as needed)

Oh I almost forgot. For the shrimp recipe, I use about 3 times the garlic it calls for.

I will have to find it. I like my Corn Pudding.

1 box Jiffy Corn Bread Mix
1 can cream corn
1 can whole kernel corn
1 16 Oz sour cream
1 stick butter
1/2 cup of sugar

Bake 350 until golden brown across the top. back uncovered. Also I like mine "dry yet moist". Dont like it wet, yuck...

That with ham or steak is awesome. I will make it and eat it 3 days straight, lol. Also I will eat helpings of it that make people think OMG what a cow... lol

Here is one I always make

Spicy BBQ Cod.

Get some cod from your local grocery store.
Take a large freezer bag and put the cod into it.
Pour some maurer's mighty hot into the bag
The sprinkle on some Grill Mates Monteral Steak Seasoning
Sprinkle a little bit of powered garlic.

Let marinate for about an hour, then throw it on the BBQ.

Easy recipe and it's really good.

You can also do the exact same thing with Chicken and it tastes great too.
