I don't get it...

What is maximum sensitivity? I'm looking at two amps from the same manufacturer with the same specs except for the "maximum sensitivity." One is 75mV and the other is 230mV. How do I know which is best?

What amps in peticular are you looking at? That spec you are looking at is part of the gain and the gain will never be up that high on either amp, so i wouldnt really look at that spec. I would be more concerned about build quality and stuff.

I'm trying to understand the difference between the Infinity 7540a and the 7541a. The only thing that has changed in the specs is the "maximum sensitivity."

Simply put, your input sensitivity setting lets the amp know how MUCH to amplify the signal to get all the power the amp has to offer, without clipping the signal. Your run of the mill headunit sends a 4 volt signal to the amp.
So don't make your decision based on input sensitivity. The difference may just be that the two amps are different model years.

more to the point don't buy amplifiers simply based on the published specs.
comparing numbers alone won't tell you if the amp is crap or not.
the spec you're looking at really has no importance to you.

Okay I get what everyone is saying. For the type of listening that I do, the Infinity amp will be fine. But I noticed that the only changed in the specs was the MS figure. I am just curious about why Infinity changed that one spec? I'm sure I'll be happy with either amp. Thanks for the help.

they probably either changed the input stage a bit or they just measured the sensitivity some different way that altered the result to look more favorable.

^ lots of companies will make minor changes like that to make it look better for a new model... more of a marketing scheme when it's something that small.

Infinity confirmed that is was just a model change with no effect on the end user. They also said that the 75mV unit is better for dealers because it performs better in a distributed display network with weak signals.
