you should of ordered 2 dual 4 ohm subs than you could of wired them to 1 ohm.

They don't take impedance (i.e. they don't take 1 ohm, 2 ohm, etc), they are impedance and present that load to the amplifier. That's why wiring them to the amp correctly is so important. Wiring the voice coils in parallel (+ to + , - to - on the same speaker wire) will effectively halve your impedance load on the amplifier for two speakers. Low impedance can also appear as a short to some amplifiers, that's why we need to be sure it's stable at the level we want it to operate at, otherwise the amp goes into protection, or internal damage can occur.

No you cant wire them to a 1 ohm each of your speakers is dual 2 ohm so you need to wire each speaker in parallel to 1 ohm the wire them together in series for a 2 ohm load. that 600-800 rms is per speaker you need something from 1-1.2kw output @ 2ohm

Correct. I neglected to look at the specs on those subs and was assuming single voice coils. I should have known better anyway as the majority of them are dual voice coils.
