As for the speakers... I would suggest if they have any on the wall, take a listen to them and if there are any other local shops around see what they've got on the wall too... Even though they will sound a lil different in your car, it will give you a good idea of what you want to buy.
And if you're worried about buying speakers through somebody else and having them install them... Just simply ask them ;) Chances are they will since you are getting the rest of your stuff through them and at least they make money off of the install.
As for the speakers themselves... You're definately doing right for the front (components), but you may want to play with the positioning of the tweeter yourself for a while to see where you want it (sounds best to you)... And I would suggest for the back you go with nothing at all or a decent lil midbass.

And Yeah you'll want dual 4 ohm Subs to at 1 ohm in parallel

Yeah, I am so glad they are so cheap and everything has the warranty which is a big plus. Cargodz told me to look for the warranty and the owner told me everything has the manufacture warranty.

for a local shop thats really good pricing. Thats real close to what that goes on e-bay for, plus you have a box specific for them and most of all a warranty. thats gonna be loud...

should I get the subs in 2 Ohm or 4 Ohm impedance?
you would want dual 4 ohm so you can wire them to 1 ohm

Ok, got the final quotes on everything, $299 for the BX1606D HiFonics Amp, $550 for the 2 12" L7's with ported enclosure, $380 for the Jensen VM9412 in-dash screen. He said he was unable to get the HiFonics Zeus components for some reason. Having said all this should I ask him if I can order the Zeus components myself and see if they could just install them as I have heard these are highly recommend? If not, what path should I take in getting speakers? He said he had some kicker speakers(not too sure about them though), polk audio speakers. Final question for this post, should I get the subs in 2 Ohm or 4 Ohm impedance?

Thanks so much guys, I am grateful for you wisdom! :D

See if they can get you Hifonics... The Brutus BXI1606D to be precise. It'll be a little more than the P/A amp, but still far less than the Kicker amp and is a far better amp ;)

They say they can order anything I want. The reason I am supporting my shop is because my boss said if I dropped his name they would give me some good deals. They are doing the best pricing on installation I have seen in the city.

Well I don't know what all your local shop carries and at what price ranges... P/A is alright, but better can definately be had... If you fill us in on what lines they carry then we could give you a better idea of what might fit the bill better...
Oh and I must say that I am glad to see you supporting your local shop ;)

Gonna talk to the parents tomorrow about getting the system. Pray for me.

Also, would you suggest another brand in a similar price range that is better than Power Acoustiks for amps?

Out of the Power Acoustik line up... I would recommend the new Gothic series amps... if you go with the Kicker L7 Dual 4ohm voice coil 12"s, then you may want to look at the Gothic OV1-3000 (1700wrms @ 1ohm).

As for a more affordable h/u with video... Look at the Jensen VM9412, Jensen has stepped up nicely in the last few years and offers some good quality features at a good price :)
