I'll try and answer as many of these as I can.
Double Din size: When you're talking about 'double din' that is the size, they will all be the same. The larger screens will not be considered a true double din. They might get around it by filling the double din hole in the dash, but the screen floats above the hole. I've never personally like these, but if you're looking for something larger. Then that's an option.
When it comes to which one to get. Stick with the better known brands, you'll just have better experience with that. I haven't purchased a new deck in a long time. So don't really know which specific models to get. But check out Pioneer, Kenwood, Alpine.
Edit: I just noticed you said trailblazer, not a Tahoe. So I don't think you'll need a full dashkit like I previously mentioned.
I think you can get away with just something like
